Project Description
Developing a new commercial strategy following the loss of its original funding structure
The Project
Kornets Hus is a nationally recognized food culture house in North Jutland, built around grain, baking traditions, and sustainable food culture. Despite a strong brand, well-regarded programming, and positive visitor feedback, the house faced declining visitor numbers and revenue pressure once its original funding model, which relied on foundation support from Nordea Fonden, was no longer in place. The task was to understand the market, identify untapped audiences, and define a realistic path to long-term financial sustainability.
Our Approach
Upstream Partners supported Kornets Hus by conducting a market analysis and developing commercial recommendations across short- and longer-term priorities. The work included:

Impact
The analysis gave Kornets Hus a clear picture of its commercial position and a prioritized roadmap for change, grounded in market data, product economics, and audience insight. By identifying gastro-tourists and corporate visitors as the largest and highest-spending growth segments, and showing where adjustments to pricing, format, and capacity could improve margins, Upstream Partners helped Kornets Hus sharpen its commercial model and reposition itself from a museum with a café into a food culture destination with a clearer path to sustainable growth.
